Chicken Something (Chicken Parmesan)

Mom spends a lot of time doing something called "pinning." I'm not sure what that exactly means because its not included in the "actions" section of my flash card app. But it usually ends with Dad and I eating experimental foods. This time it worked out okay though.

I know it looks like all I'm doing is noshing on an excellent honey crisp apple in this phot but, well I am. But that stuff on the plate was my second serving of Chicken Parmesan. It was delicious. Spaghetti I already like but this basically had chicken nuggets on top. What's not to like about that?


Mom used canned tomatoes for the recipe though because seriously who is she, Jill Mikrut? Nope. There is a prettier picture on the website but that's just not how I roll. It was just mom and I for dinner so I think we had this a couple nights in a row but I didn't mind. It's like my favorite books. I could read the same ones every night!

Crunchy chewy (Cucumber Tomato and Cous Cous Salad)

Wait, did that say salad? No. I did not eat salad tonight. Mom's being funny. What I did eat was colorful and had a mix of crunchy and chewy parts. And bonus some of the little chewy parts were like tiny balls that I got to poke around my tray when I wasn't shoving them in my face. No fork necessary this one was all hands.


True this is me noshing on corn on the cob. See my first post. But look at my plate. I destroyed that stuff. So check out the recipe below. It's Pete approved.

1 medium cucumber (diced)
1/2 pint grape tomatoes (diced)
1/2 cup cooked pearl Cous Cous.
1/2 block feta cheese (diced)
Mix above ingredients in medium bowl
Squeeze 1/2 lemon
Drizzle with EVOO
Mix again

Take a seat

Hi! I'm Pete. I love to eat, am luke warm on utensils and have opinions. Oh and I'm sixteen months old. Mom makes my dinner, and because I care about preventing toddler hunger everywhere, I am going to be posting my reviews of dinner here for you to learn from.

Let's start with the basics. I like grilled cheese, cheese quesadillas, macaroni and cheese, and chicken nuggets. But if you didn't already know that's what kids like, then you may be beyond my help. Good luck and remember if your toddler doesn't like it, you either made it wrong or it was no good to start with. Accept the blame and move on to something new. My mom is working on these skills daily.
