Tacos! - Barbacoa Burritos

I'm not sure if you guys have ever had Tacos before. We have them sometimes. They are pretty good. It takes some assembly and I get pretty upset when my taco doesn't stay together, but I do like trying it out.
Mom made this in the morning before we left for school and when we came home I thought we'd just get right to eating, but turns out she wanted to make some rice, and cut some tomatoes and lettuce. It was exhausting for me and the girl. We made sure to each cling to one of Mom's legs so she would know we were hungry. And if that didn't do it, we both alternatively practiced our screaming so she would really know. I'm not sure how long rice takes to make in our rice cooker, but we kept it up for about that long.

But the results were worth it. I noshed hard on these once they were all rolled up, even though I declared that I was not going to be eating any of the beef filling. Once it was inside the burrito it was fine. See, it becomes part of the taco then, and tacos I like!
The girl ate hers without rolling it up. What. A. Chump.

Stuffed Peppers

Have I ever mentioned that I love peppers? Green, red, yellow? Doesn't matter. I like to eat them all. So Mom got this idea that if she took something I love and made it into something else, I'd love that too. She's silly isn't she?

The first thing she did to defile my precious peppers was drop them in boiling water. They still look normal but they weren't crunchy anymore. Don't worry, I squeezed them myself when I thought she wasn't looking. I have to be sure.




Then she filled them with meat, beans and keen-wah. WHAT IS GOING ON?! She wasn't picking up on my subtle hints that she was RUINING the peppers. The recipe even told her to use brown rice and she used keen-wah instead. I think I totally would have been on board with brown rice. After they cooked covered for a while, she took them out and put cheese on them.
And they went back in the oven for a few minutes to melt the cheese. By this time the girl was getting really upset. She was tired and hungry. Who can blame that poor kid. She was waiting forever!
I ate a bunch of sliced up raw pepper and then gave mom all kinds of shade about her trying to make me eat a trumped up version of a pepper.
And even though the girl spent the first twenty minutes of dinner crying and thrashing in her high chair, she eventually sat on Mom's lap and ate her entire plate. She must have been delirious.

Anyway this is not Pete approved, but the girl and mom sure seemed to like it.

Hamburger Enchiladas

Remember when we had chicken enchiladas? Yeah, me too. Those were delicious. I didn't have the same warm feeling about these, even though mom told me they had hamburger in them. If there is so much hamburger, what are those little green things? It suspiciously looks like a vegetable. Apparently the recipe said that no one would notice all that keeny, but I did notice. And when Mom pulls a fast one on me like that, I get real suspicious. Plus, I didn't even get to help make any of this so how do I know it's not tainted.



So despite liking hamburger and cheese, two main ingredients in this one, I didn't want to eat any of it.

The girl was going to eat hers but when she noticed I wasn't going to eat mine she stopped. And hey, she had a blueberry to eat. Why couldn't I have a blueberry? Yeah sure I found that on the floor and put it on her tray, but I want one too, from the refrigerator. I was told no.
Whoops Mom forgot to take a picture of the finished product but here you go, it's a photo of some eaten stuff. Dad ate all his but he didn't ask for seconds. Looks like Mom is the only one that liked this one, which she says is too bad because it means we won't likely have it again.

Chicken!! (Chicken Enchiladas)

Me again. And guess what? We had chicken, again!

I think Mom is starting to understand my not so subtle hints. So I got to help with this too, which is great because any time we get to put shredded cheese in something, it always gives me the opportunity to sneak a few bites when no one is looking.


Mom says the thing on the left is a "grown up beverage". I tried to stick my finger in it, but she was always watching. Anyway, after we filled the tortillas with chicken and cheese, we rolled them up and stuck them in this pan. I thought we were done and called it a day, but apparently there was this whole step that involved making a sauce and flour and green chiles, oh and for some reason Mom used Daddy's yogurt in the sauce. I asked Mom a bunch of times if she was sure that's what she wanted to do, but she kept saying yes. Geez woman, just trying to help here. 


Don't be fooled, that is the second adult beverage there on the left... not the same one. But anyway after the sauce and more cheese (ha sneaked some of that too) went on, it went into the oven, which I am NOT allowed to touch. Nope. Nope. Nope.



Sometimes when mom makes Mexican food it's too spicy for me, but this was just right. Plus, mom made them extra cheesy which is great because who doesn't like cheese?

Here's the girl sticking her finger into the sauce and licking it. See, I told Mom she didn't really know how to use a fork. Oh and that cookie on her tray, I put that there. I found it on the floor and figured she might like it. I'm a good brother like that.

Here's me, eating the chicken. Mom had to cut the enchilada apart so I could see the chicken before I agreed to eat it. I mean, I know I put them together, but how do I know someone didn't switch that stuff around while I wasn't looking?
